Zucchini Salsa

There is something magical about a homemade green salsa.Bright, tangy, spicy, and bursting with freshness, it has the power totransform an ordinary meal into something memorable. Whether spooned overtacos, drizzled onto grilled meats, paired with tortilla chips, or stirred intorice and beans, green salsa is one of the most versatile condiments in anykitchen.

Ingredients
  

  • 3 medium zucchini
  • 6 tomatillos
  • 6 serrano peppers
  • ½ white onion
  • 4 cloves garlic
  • 1 teaspoon salt or to taste

Method
 

  1. Slice the zucchini into large chunks while cutting out and disposing the center of the zucchini with the seeds. Cut the onion into quarters. Place the serrano peppers, garlic cloves, and onion on a frying pan with a bit of oil and begin to char the vegetables.
  2. In a separate pot, boil the zucchini and tomatillos in water until soft. The tomatillos will be finished first, while the zucchini will take longer.
  3. Blending Everything Together
  4. Allow the vegetables to cool for a few minutes after cooking.
  5. Transfer the zucchini, tomatillos, serranos, onion, and garlic to a blender or food processor. Add the cilantro and salt.
  6. Blend until you reach your desired consistency.
